No potluck this year. I'm cookin' for everyone. I'll probably stay the night, I don't think Eric wants to though.

Something I can prep in advance that travels well, hell if I'm cooking for 40 after dark in freezing temps.

Kevin, I have a 10 gal. pot if you want to do a mega batch of Chile.

I've got a big one too, yours might be bigger though.
Better question, do you have a chili recipe you like? Because I can throw something together but I don't have anything special.

I have an awesome chili recipe but you'll need to scale it up.
This is not a hot chili, but really tasty.
veg. oil
1 lb ground beef
1 lb ground pork
1 med. onion, diced
3 lg cloves garlic, finely minced
1/2 tsp red pepper flakes
3 TBs cumin
3 TBs chili powder
1 TBs Mexican oregano
1/2 tsp salt
2 14.5oz cans diced tomatoes
3 14.5oz cans tomato sauce
brown meat, remove from pot and drain off fat
saute onion in oil til translucent
add garlic and saute another 3 min or so
add the meat back to the pot and all the rest of the ingredients.
simmer for a couple hours.
we serve over rice (a southern thang), topped with cheddar
feeds 8-10 normal people (with rice)
